As we are well and truly getting into autumn now thought this colourful salad would be nice to share, it can brighten up even the rainiest of days. This salad is so quick and easy to make and packed full of goodness for you! It doesn’t just look good in the bowl but its good for your body too!
All you will need is:
- Sweet Potato (you can add as many as you want) I have used one in this recipe
- Feta cheese (as much as you want)
- Half a bag of mixed leaf salad
I have poured a little bit of low fat beetroot dressing over the top to add some flavour
On this particular day I added one teaspoon of green pesto for flavour as well (you don’t need to add the pesto if you prefer not to)
I cooked the sweet potato, chopped it up and then put it on the bed of mixed leaf salad. I also chopped the feta cheese into chunks and laid that on top of the bed of mixed leaf salad.
As you can tell you can adapt this recipe to suit your taste buds and the flavours you like. These items are easily picked up in any local supermarket and you can make this salad as big or as little as you want.
