Yep you read it correctly! I have come up with a healthy ice cream recipe. Well I can’t take full credit for it, my best friend Miriam also helped.
We all know that as the season turns into autumn here in the UK, the days get shorter and its starts getting darker quicker at night and all that jazz. If you are anything like me it’s the time a lot of people turn to comfort foods. The hot meals that you look forward to when you get home from school, work or university that just the thought keeps you going throughout the day. You may be thinking why is she talking about ice cream when we are going into winter?! But everyone knows you need desert! (or at least every once and a while) Personally I LOVE ice cream, I could eat it through the winter, spring, summer and autumn. Anyone who knows me will know that I could survive with just ice cream alone if I needed to!
Throughout my university years Miriam and me came up with the idea of healthy ice cream. We needed that ice cream fix but we didn’t want the guilty feeling after it. We used to eat this as a snack, for desert, or sometimes even for brunch because it had the yogurt in.
The recipe is as simple as:
Low fat Greek style yogurt (you can use any yogurt you want really)
Frozen berries or fresh berries, we often used the packs that you can buy frozen in supermarkets.
Dark chocolate (at least 70%) I only bought two because they were on offer in Morissons at the moment.
Depending on how healthy you are feeling you can add what you like. We sometimes added chocolate buttons if we really wanted to be naughty. But SHHHHHHH! Don’t tell anyone.
Empty all your contents into a bowl, cut the dark chocolate how you fancy it really. Sometimes we used to cut it into chunks or sometimes we cut it finely. You then put it all into a big mixing bowl, give it a good mix and then freeze it. It does take a few hours to freeze and we used to normally freeze it overnight and eat it the next day.
When you take this out of the freezer it will take a while to defrost. If you just can’t wait you can pop it in the microwave, it tastes the same to when defrosted and refrozen!

I love this idea!! I mean, who doesn\’t like guilt-free ice cream!!! I wonder if there is a substitute for the Greek Style yoghurt. I\’m not sure we can get it here in Lebanon. Anyone have any ideas???

Loved this recipe! Its takes some getting used to because it isnt as sweet as the ice cream that Im used to,but I love that it is healthy and 100% guilt free!!! For those of you who really need that sugar fix, try it with a drizzle of honey. Its sweeter, but still healthy. Thanks Lydz for this ice cream. Can\’t wait for more healthy treats!
